Welcome to Ben & Max Schram, a winery residing in an old winemaker's house over 100 years old. Despite this, the wines are modern, in the best sense of the word, fermented in temperature-controlled stainless steel vats. If here we are experimenting with “wild yeast”, the most natural form of fermentation, the Domaine remains one of the last to cultivate Sylvaner, which has almost completely disappeared from the region.
